Carrot Salad

Things have been fairly hectic Chez Ais of late. Finals finished on Thursday, and what better way to celebrate than with a big ole BBQ. Unfortunately, all that cooking didn’t leave much time for blogging. All is not lost however, because there is plenty of fodder for future posts, with home-made salsa, red onion marmalade, spicy chicken drumsticks and strawberry tart all set to feature.

For today however, there is just a carrot salad to contend with, and though it’s simple, it really is one of my favourite summer salads, so tasty and refreshing. Having a food processor with a grater attachment really speeds this along, but I’ve made this with only a hand grater before and it really didn’t take more than a few minutes to grate all the carrots so don’t let that put you off trying it!


8 – 10 carrots
1 handful sunflower seeds
1 handful sultanas

Juice of 1 orange
Juice of 1 lemon
2 tsp honey
4 tsp extra-virgin olive oil
Black pepper

1. Peel and grate the carrots, then add the sultanas and sunflower seeds.
2. In a separate bowl, mix the fruit juices, honey and olive oil and season with black pepper.
3. Pour over the carrot salad, mix and enjoy.
