Bloggers Delight: Part 2

CheapEats.ie is a fantastic website that highlights some of the great value to be had in supermarkets and restaurants around the country. Last week, the mentioned Superquinn’s 50th Birthday Celebrations, which has special offers on a wide range of items across the store, including on a strange product called ‘Rainbow Trout Seabass’.

Definitely Not Sea Bass!

My student instincts generally prevent me from buying pre-marinated foods, which tend to be more expensive than others, plus you don’t know whats gone into them. But The Daddy was onto a winner. For €8 we got 6 big pieces of delicious Rainbow Trout, and dinner was ready in 20 minutes. (Always a win in my books. Incidentally, the reason cous-cous is my carb of choice. That and chronic over-exposure to rice while in India).

The trout got wrapped in tin foil and stuck in the oven at 200°C. Meanwhile, I made the cous-cous, mango salsa and tomato salad. I even managed to get The Sister to make some (more) stewed rhubarb for dessert. Success.

Balsamic Vinegar Tomato Salad

Tomato salad: Slice the tomatoes, add fresh basil, generous sprinkling of fresh ground pepper and a splash of both olive oil and balsamic vinegar.

Mango Salsa

Mango salsa: Cube a mango, add a generous handful of chopped fresh coriander and the juice of a lime. Mix it all together.
