This is how The Mammy cooks.

Fillet steak with peppercorns

Potatoes, which I conveniently forgot to photograph, aside, The Mammy made the dinner last night. Sometimes you need that, you know? To say it was delicious would be an understatement of epic proportions.

Fillet steak with peppercorns

Cook the steak in a hot pan for 5 minutes, then turn and add peppercorns (the soft kind you get in brine).

Steak Resting

When cooked (Mammy typically *very* vague on the timing) remove from the pan and leave to rest.

Sauce for Steak

Meanwhile, make a sauce in the steak pan by adding red wine and creme fraice (or cream) to the peppercorns.

Tomato Salad

Serve with a fresh salad (and roast potato wedges, with red onion and garlic).
